The wine becomes richer as it sits in the glass, and the tastes become riper and almost tropical. This bright, sumptuous Dom Perignon exudes ripe apricots, passion fruit, and peaches. The wine’s volume makes it palatable now, but those looking for additional complexity should age it for at least a few years to enable some of the baby fat to go away.
